THE extremely pricey delicacy known as caviar is made from the roe (eggs) of a big fish called the sturgeon.

They live mostly in salt-water lakes in certain parts of Europe and Asia and leave their lakes to lay their eggs in river beds.

Fishermen catch the fish before they lay their eggs and keep them in underwater cages. When the eggs are developed, the fish are killed and the eggs removed from their bodies.

The eggs are kept in salty water for a time before they are put into jars. - wisegeek.com; homecooking.about.com; bigsiteofamazingfacts.com
