Goals by Richard Henyekane, Nhlanhla Zothwane, Thokozani Mshengu, Njabulo Manqana (brace) and a Deniss Ivanovs own goal sunk The Urban Warriors to one of the heaviest cup final defeats in PSL history.
Arrows walked away with the R8 million prize despite the Capetonians being hot favourites before the game.
Mngqithi said his side could have scored even more goals.
"We could have scored 10 goals today judging by the way we played. There were skeptics who questioned our style of play, but it has finally yielded the results. I'm also glad the competition is over now and we can start concentrating on the league," said Mngqithi who also paid tribute to the late Arrows director Rocky Madlala.
"When I made my presentation to management at the beginning of the season, I said I would like to participate in two or three cup finals and at least win one of them. Fortunately we have achieved that," he said.
Meanwhile Ajax caretaker coach Jan Pruijn summed up his team's performance as "embarrassing". He said Arrows were deserved winners.
"We got it wrong from the first minute. We knew how Arrows would play, but we never expected anything like this. I think the difference was who was hungrier to win it from the two sets of players and in the end I don't think my players were hungry enough to win it," Pruijn said.
The match kicked off at a blistering pace with Arrows scoring two quick goals within 20 minutes of a very exciting first half.
Lights went out before the second half restart forcing a 30 minute delay.
It was worth waiting for the subsequent five star performance by Arrows who scored four more goals.
